Ingredients
2 pounds of steak, cut into bite-size pieces (Emy used beef tenderloin)
4 cloves garlic, minced
¼ cup butter
¼ cup white wine (or beef broth)
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon ground pepper
Preparation
Cut steak into bite-size pieces and season with smoked paprika, salt, and pepper.
Sear all sides of the steak in a hot cast iron skillet with olive oil. Don’t overcrowd the pan.
Once seared and cooked to your preferred temperature (125F for Emy), set aside.
Add minced garlic to the skillet and cook for 10 seconds. Deglaze with white wine, scraping up flavorful bits.
Add butter, cook for 2 minutes. Toss steak back in and coat with butter. Garnish with parsley.
