Slow Cooker Honey Garlic Chicken Recipe


Honey Garlic Sauce:
⏺  ⅓ cup honey
⏺  1 tbsp garlic, minced
⏺  ½ cup soy sauce, low-sodium (see note)
⏺  ¼ cup ketchup
⏺  1 tsp dried oregano
Crockpot Chicken and Vegetables:
⏺  2 pounds chicken thighs, bone-in, skin-on
⏺  1 pound baby red potatoes
⏺  1 pound carrots, peeled
⏺  1 cup onions, chopped
⏺  1 pound green beans, trimmed
⏺  fresh parsley, chopped, for serving (optional)
⏺  salt and pepper to taste
Cornstarch Slurry (Optional):
⏺  2 tsp cornstarch
⏺  3 tsp water


1. Make the Honey Garlic Sauce: In a small bowl, whisk together the honey, minced garlic, low-sodium soy sauce, ketchup, and dried oregano. Set aside.
2. Layer the Crockpot: Add the chicken thighs, baby red potatoes, peeled carrots, and chopped onions to your 4-6 quart slow cooker.
3. Pour the Sauce: Pour the prepared honey garlic sauce mixture evenly over the chicken and vegetables in the slow cooker.
4. Slow Cook: Cover the slow cooker securely with the lid and cook on LOW for 6-8 hours or on HIGH for 3-3 ½ hours (see recipe note for cooking time variations).
5. Add Green Beans and Thicken Sauce (Optional): About 20 minutes before serving, add the trimmed green beans to the slow cooker. If you want a thicker sauce, whisk together the cornstarch and water to create a cornstarch slurry. Add this slurry to the slow cooker as well.
6. Finish Cooking: Reseal the lid of the slow cooker and cook for an additional 15-20 minutes, or until the green beans are tender-crisp and the sauce has begun to thicken.
7. Serve: Using a slotted spoon, carefully transfer the cooked chicken and vegetables to serving plates.
8. Broil Chicken (Optional): If you prefer crispy chicken skin, broil the chicken thighs for 2-3 minutes on high heat. Keep an eye on them to avoid burning.
9. Garnish and Enjoy: Drizzle the remaining sauce from the slow cooker over the chicken and vegetables. Garnish with chopped fresh parsley for an extra pop of color and flavor, if desired. Serve and enjoy your delicious slow cooker honey garlic chicken!
