Ingredients

12 ounces egg noodles
1 pound of Italian sausage
1.5 cups of bell peppers (use different colors for presentation)
1/4 cup sliced onion
2 minced garlic cloves
1 teaspoon of Italian seasoning
1/2 teaspoon red pepper flakes
1/2 cup of white wine
2 tablespoons of chopped parsley
1 can (28 oz) diced tomatoes, undrained

Preparation

1. Heat 1/2 tbsp olive oil in a skillet. Brown Italian sausage, then set aside.

2. In the same skillet, sauté onion, bell peppers, and garlic for 3 minutes.

3. Add white wine, simmer till almost evaporated to intensify flavors.

4. Mix in diced tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Simmer 10 minutes to blend flavors and thicken.

5. Return sausage to skillet, add parsley. Combine and cook 5 more minutes.

6. Keep warm on low. Cook noodles as instructed.

7. Drain noodles, add to skillet. Toss for even coating.
