Ingredients
1 quart fresh or frozen blackberries, rinsed
1 cup water
1 cup sugar
½ teaspoon salt
½ teaspoon lemon extract
Dumplings:
1 ½ cups flour
2 teaspoons baking powder
1 tablespoon sugar
¼ teaspoon salt
¼ teaspoon nutmeg
⅔ cup milk
Preparation
1. Make the Berry Filling:
In a large, wide saucepan, combine the rinsed blackberries, water, 1 cup of sugar, ½ teaspoon of salt, and lemon extract.
Bring the mixture to a boil over medium heat.
Once boiling, reduce heat and simmer for 5 minutes.
2. Prepare the Dumplings:
In a separate bowl, whisk together the flour, 2 teaspoons of baking powder, 1 tablespoon of sugar, ¼ teaspoon of salt, and nutmeg.
Gradually add the ⅔ cup of milk to the dry ingredients, stirring until just combined. A slightly shaggy dough is okay.
3. Assemble and Cook:
Drop tablespoons of the dumpling dough onto the simmering berry mixture.
Cover the saucepan tightly with a lid.
Simmer the dumplings for 15 minutes without peeking or lifting the lid.
4. Serve and Enjoy!
Let the dumplings cool slightly before serving. Enjoy them warm with a scoop of vanilla ice cream or whipped cream for an extra treat!
